MOLE POBLANO
(Chicken in Mole sauce)
The legend says that, centuries ago in the town of Puebla, sisters at a local convent expected a visit by an important dignitary. Desperate for a dish worthy of their guest, they invented this complex sauce.
Acclaimed for its wonderful flavor then, MOLE POBLANO remains the pride of Puebla Mexico today. “Mole” refers to a whole category of sauces; Mole Poblano always includes its signature ingredient: Chocolate.
